  • 1 medium onion, finely chopped
  • 1 tbsp garlic, minced
  • 1 small carrot, finely chopped
  • ½ cup capsicum (red, green, yellow – diced)
  • ½ cup beans, chopped
  • ½ cup cabbage, shredded
  • ½ cup sweet corn or peas (optional)
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 1 tsp black pepper powder
  • Salt to taste
  • 2 tbsp spring onions (chopped, for garnish)

Step 1: Prep Rice

  • Use cooked and cooled rice (refrigerated rice works best to avoid mushiness).

Step 2: Stir-Fry Vegetables

  1. Heat oil in a wok or large pan.
  2. Add garlic and sauté until fragrant.
  3. Add onion and stir-fry for 1–2 minutes.
  4. Add carrots, beans, capsicum, and cabbage. Cook on high flame for 2–3 minutes (keep veggies crunchy).

Step 3: Add Seasonings
