- 1 medium onion, finely chopped
- 1 tbsp garlic, minced
- 1 small carrot, finely chopped
- ½ cup capsicum (red, green, yellow – diced)
- ½ cup beans, chopped
- ½ cup cabbage, shredded
- ½ cup sweet corn or peas (optional)
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tsp black pepper powder
- Salt to taste
- 2 tbsp spring onions (chopped, for garnish)

Step 1: Prep Rice
- Use cooked and cooled rice (refrigerated rice works best to avoid mushiness).
Step 2: Stir-Fry Vegetables
- Heat oil in a wok or large pan.
- Add garlic and sauté until fragrant.
- Add onion and stir-fry for 1–2 minutes.
- Add carrots, beans, capsicum, and cabbage. Cook on high flame for 2–3 minutes (keep veggies crunchy).
Step 3: Add Seasonings
- Pour in soy sauce, vinegar, salt, and black pepper. Mix well.
- Add rice and toss everything together on high flame for 2–3 minutes.
Step 4: Garnish & Serve
- Sprinkle chopped spring onions.
